I'm not sure what the difference between the MK-II and MK-III are, but I'm guessing your is a MK-III. He stopped selling theremins before I knew there was a third version.
Kees' original photos of the MK-II (http://s776.photobucket.com/albums/yy42/anatak/Kees%20MK-II/) do not show the extra knob on the back side. I don't remember any more, but I think it is for coarse tuning.
Besides Kees Enkelaar, Uncle Howie (Howard Mossman) is the only one who knows what the improvements were. He was assisting Kees with the improvements.
The MK-I (http://s776.photobucket.com/albums/yy42/anatak/Kees%20MK-I/) had a cigar-box shaped hinged cabinet and a telescoping pitch antenna. It had only pitch and volume controls in addition to a continuously adjustable timbre control. All of the controls had a small tuning range and were extremely sensitive.
The MK-II introduced fixed-length pitch antenna and a change in cabinet design; a longer, narrower box. A "gain" control, power switch and LED was added, and the timbre was changed to a two-position selector switch. All of the controls were smoother and more user-friendly. I'm not sure when the knob on the back came into the picture.
