I play both the Guitar and the Theremin on this one. I messed up the middle, but for the most part, I'm pretty satisfied. It's obviously not perfect and there is much room for improvement, but if you have any suggestions of how I can improve, let me know. :)

From what I understand of pitch preview, I think so. I sound the first note before I start playing so I can start correctly. Then, I just edit out that sound. In that sense, I am previewing the pitch, but as for if it is true pitch preview or not, I'm not sure. I think I read somewhere on here that true pitch preview is not audible to anyone but the performer, as it is a direct line from the pitch oscillator to a separate monitor for the performer. Is this correct? I kind of stopped reading after that as it started getting into how to open your box and fiddle with stuff in order to add a separate pitch preview jack. It's a cool idea, but I'm always hesitant when it comes to taking apart electronics. :)

That is correct. A pitch preview allows you to hear the sound of the theremin even when you are muting it with your volume hand.
