I likewise had a completed PCB long before I had a permanent cabinet. So to fill the gap I used corrugated cardboard and white glue! Worked just fine until I completed my permanent cabinet design. I used double-thickness CCB, cutting individual panels and gluing them together to form a box.

I think that you have chosen wisely! The Theremax kit is one of the best kit Theremins available. Check out the extensive modifications that the seasoned Theremax owners have listed on the net.
I did and found a very playable instrument.
