I think the EW tuning procedure, somewhat simplified, should work fine.
The pitch coils are located on the + end of the battery holder.
From looking at your photo, the pitch reference coil looks to be in the factory set position judging by the orange paint. Unless a part has failed, it should be ok.
The one closest to the battery + terminal is the pitch VFO.
That and the trimmer cap by the pitch antenna should be about all the adjustment you need if you don't use the volume antenna.
I'd just play with those two until you get about 3kHz when you touch the antenna, dropping to zero at about 2 feet away.
When I set mine, i just left the cap at about half and set the coil to make a tone, then brought my hand close.
If the pitch goes down to zero, then up, turn the coil the other way, through zero, until you get a tone. Then reverse direction until it just stops.
Then give it a test play.
Mr Fred, please feel free to correct me on this. Even though I do electronics for a living, this is my first (and only) Theremin, and not what I normally work on.

there must be still a problem in the schematic, since the volume antenna seems to be connected through a 33k resistor to V+ and would make no effect...
