I'm an amateur electronics hobbyist trying to build a theremax for my brother. I have all the parts except the coil. When I look for one on Digikey I'm lost as to what I'm looking for as I have no experience with inductance coils. Will any 1mH coil work? What should I be looking for or what part should I buy, if you know?
coil for Theremax?

Welcome!
Are you scratch building this ThereMax, or did you purchase the kit from PAiA?
You may freely download manuals from www.paia.com for any of their kits.
Good Luck!

I am building it from scratch based on the info i found here:
http://www.sonelec-musique.com/electronique_realisations_theremin_002.html
They give what transformers to buy but not what coil to buy. I need to know more about the
"b) a standard 1mH fixed inductance in series with the volume loop"
like would this work?

No, this is a 1uH, not a 1mH coil. And thanks to its big ferrite core, it would not do the job at this place. A linearization coil in an antenna circuit has not to store as much energy as coils i.e. in switched mode power supplies, but it has to be a frequency depending impedance with low parasitic capacitance and high self resonating frequency. Since the volume oscillator is working slightly below 1MHz, the SRF should be above 3MHz.
I'd suggest taking this one:
click me, but not too hard ;-) (http://search.digikey.com/scripts/DkSearch/dksus.dll?Detail&name=M8205-ND)
